Recipe Vegetable flan of of 15-09-2011 [Updated on 20-07-2015]
Hello everyone, my days are flowing very fast, being a mother is really challenging but luckily Elisa, at least for now, is a little angel, at night she wakes up every 3/4 hours to make baby food and during the day when she is 'awake loves being in her arms while I am at the pc (like now) or rests sleeping curled up on my belly, but she is also quiet in her port enfant where she makes verses and plays, frolicking and moving her hands, so she also leaves me time to cook a little something to post on the blog;)
Today's recipe is that of a flan of grilled seasonal vegetables, stuffed with provolone and parmesan, a colorful and really delicious single dish that I prepared the other night for dinner and that has found everyone's approval. As vegetables I used potatoes, courgettes, aubergines and peppers and in addition to the goodness I got a really nice color effect to see that gives the dish an extra edge. How to make vegetable flan
Boil the potatoes for about 15 minutes, peel the potatoes and cut them into thin slices about 3 mm
Roast the pepper, then remove the skin, and remove the stalk, seeds and white filaments and cut it into flakes.
Peel the courgettes and the aubergine and cut them into slices of about 3 mm
Roast the vegetables on a griddle and set aside.
Cover the plumcacke mold with wet and squeezed parchment paper and grease it with a little oil.
At the bottom of the mold, start placing a layer of potatoes, salt and pepper.
Place the courgettes and cover with provolone and Parmesan.
Add one of peppers and then one of aubergines, salt and cover with provolone and parmesan.
Continue alternating all the vegetables.
Finish the flan with a layer of potatoes, salt and pepper. Pour the beaten egg with the milk, salt and pepper, sprinkle with the remaining Parmesan.
Bake the vegetable flan at 180 ° and cook for about 40 minutes.
Allow to cool before turning the vegetable flan over onto a serving dish.
Cut into slices and serve on the table.
