The millet meatballs they are a nice recipe to use for a little variation of the diet and to try something new it is tantalizing. When we talk about millet we immediately think of bird food but this cereal is back on our tables thanks to its many properties and its versatility, in fact it lends itself to the preparation of various recipes, such as soups, croquettes or even desserts.
For my first approach with this cereal I chose to enrich the meatballs with vegetables and black olives, the result was really super! Tasting test passed by the whole family and you will certainly find it starring in my kitchen for other recipes. I have chosen to prepare this dish in a vegetarian version and with a cooking in a pan, alternatively you can bring to the table vegan millet meatballs avoiding the breading with egg and then cooking them in the oven.
How to make millet meatballs
Rinse the millet several times under running water, then put it in a saucepan with lightly salted water and boil it according to the times written on your package, it will take about 15/20 minutes.
Once ready, drain it and let it cool in a small bowl.
Meanwhile, chop the onion and brown it in a pan with a little oil.
Add the courgettes to brown them until golden brown, then add the dried tomatoes and the pitted olives cut in half.
Season with salt, stir and leave to flavor for a few minutes.
Transfer the millet to the pan with the marjoram and mix.
Then form the meatballs, pass them in the egg and then in the breadcrumbs.
Heat a little oil in a pan and cook the meatballs until they are browned.
Your millet meatballs are ready to be brought to the table.
